Sweet Potato Delight is an moderately easy dinner. Made with 1 qt. mashed sweet potatoes, cooked, 1 stick margarine, 1/4 tsp. salt, 2 tbsp. brown sugar and 1/2 c. chopped pecans, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook enough sweet potatoes to make 1 quart of mashed potatoes. When tender, drain off water.
Add margarine, salt and brown sugar.
Beat with mixer until fluffy.
Add pecans and pineapple. Pour this mixture into baking dish; cover with marshmallows and bake at 350Β° until marshmallows are brown.
Serve hot.
Can be reheated.
