Sweet Potato Crunch

Cook potatoes until tender, about 15 minutes.
In blender, process until smooth the potatoes, applesauce, egg yolk, vanilla and spices.
Beat egg white until stiff peaks form. Gently fold into potato mixture and spoon into 1 1/2-quart soufflé dish coated with cooking spray.
Combine brown sugar, flour and margarine.
Sprinkle over potato mixture.
Bake at 350° for 35 minutes or until set.
Serve immediately.
