Sweet Potato Croquettes

Mix sweet potatoes with fat, salt, pepper, sugar and 1 well beaten egg.
Beat well.
If mixture is too stiff, add a little hot milk.
Shape into croquettes.
Roll in crumbs; dip in beaten egg, diluted with water, and roll again in crumbs.
Fry in deep fat at 375Β° until golden brown and drain on unglazed paper.
