Sweet Potato Casserole
Sweet Potato Casserole is an moderately easy dinner. Made with 3 or 4 medium sweet potatoes, 1 c. sugar (more for taste), 1/2 tsp. salt, 2 eggs, beaten and 1/3 stick margarine, melted, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel, slice and cook potatoes.
(Potatoes will not turn dark if you slice them in salted water.)
Mash potatoes with electric beaters (don't scrape beater off as these have strings from the potatoes on them). Mix rest of ingredients into potatoes and pour into a long baking dish.
