Sweet Potato Casserole
Sweet Potato Casserole is an moderately easy dinner. Made with 1 (1 lb.) can sweet potatoes, drained or 2 lb. cooked, fresh sweet potatoes (i use fresh), 1/2 c. sugar, 4 tbsp. soft butter, 1 tsp. salt and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Put potatoes, 1/2 cup sugar, 4 tablespoons butter, salt and vanilla in a mixer bowl.
Beat until mixture is very light and fluffy (this is the secret of the dish).
Pile mixture into a greased 2-quart casserole.
Mix together pecans, 1/2 stick butter, 1/2 cup brown sugar and cornflakes to make a crumbly topping. Spread over sweet potato mixture.
Bake at 350Β° for about 45 minutes or until mixture is hot and topping browned.
