Sweet Potato Cake
Sweet Potato Cake is an moderately easy dinner. Made with 1 1/2 c. cooking oil (crisco), 2 c. sugar, 4 eggs, separated, 4 tbsp. hot water and 2 1/2 c. cake flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine oil and sugar, beat until smooth.
Add hot water and egg yolks then beat well.
Sift together and add dry ingredients. Stir in potatoes, nuts and vanilla; beat well.
Beat egg whites until stiff and fold into mixture.
Bake in three greased cake pans for 25 to 35 minutes.
Cool and frost.
