Sweet Potato Cake
Sweet Potato Cake is an impressive dinner. Made with 1 1/2 c. salad oil, 2 c. sugar, 4 eggs, separated, 4 tbsp. hot water and 2 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine oil and sugar in a large mixer bowl.
Beat until smooth.
Add egg yolks; beat well.
Stir in hot water.
Combine dry ingredients.
Blend into sugar mixture.
Stir in grated potato, pecans and vanilla, blending thoroughly.
Beat egg whites until stiff.
Fold into batter.
Spoon mixture into three 8-inch cake pans.
Bake at 350Β° for 25 to 30 minutes.
Remove from pans.
Cool on wire racks.
