Sweet Potato Biscuits
Sweet Potato Biscuits is an easy dinner. Made with 1 egg, slightly beaten, 3/4 c. sweet potato, cooked and mashed, 1/3 c. sugar, 5 tbsp. shortening and about 2 c. self-rising flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix egg, sweet potato, sugar and shortening in a bowl; beat until smooth.
Stir in enough flour to make a dough stiff enough to turn onto a floured surface.
Knead a few times; then roll out 1/2-inch thick.
