Sweet Potato Bake
Sweet Potato Bake is an moderately easy dinner. Made with 3 medium sweet potatoes or 1 (18 oz.) can, 1 (17 oz.) can apricot halves, drained, 3 tbsp. brown sugar, 3 tbsp. cornstarch and 1/2 tsp. grated orange peel, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook potatoes in boiling water for 30 to 40 minutes.
Cut lengthwise and place in a 10 x 6 x 2-inch baking dish.
Drain apricots, reserving liquid.
Add water, if necessary, to make 1 cup liquid.
Arrange apricots over potatoes.
In saucepan, combine brown sugar, cornstarch, salt, cinnamon and grated orange peel. Cook until thick.
Sprinkle raisins over potatoes and apricots and pour liquid all over.
Bake in 350Β° oven for 20 to 30 minutes.
