Sweet Potato Bake
Sweet Potato Bake is an easy dinner. Made with 8 medium-size yams or sweet potatoes, 4 tbsp. butter or margarine, 3/4 c. brown sugar (1/2 c. in yams; reserve 1/4 c. for glaze), 1/2 c. cream or half and half and 1/2 c. crushed walnuts, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Scrub and boil whole yams or sweet potatoes for 30 minutes. Drain and cool 30 minutes.
Cut yams in half lengthwise and scoop out meat.
In a large mixing bowl, whip yams with butter or margarine, 1/2 cup brown sugar, and cream or half and half.
Pour into greased casserole dish.
Sprinkle with walnuts and remaining brown sugar.
Bake, uncovered, at 350Β° for 30 minutes or on High in microwave for 20 minutes.
