Sweet Potato Bake
Sweet Potato Bake is an moderately easy dinner. Made with 5 c. mashed sweet potatoes or yams, 1/2 tsp. salt, 2 tbsp. margarine, 1 (9 oz.) can pineapple tidbits (undrained) and 2 c. miniature marshmallows, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine potatoes, salt, butter, pineapple and juice.
Place half of mixture in a buttered casserole dish.
Top with half the marshmallows.
Add remaining half of the potato mixture.
Arrange pecans on top.
Cover; bake at 350Β° for 30 minutes.
Remove cover the last 10 minutes before serving and add the rest of the marshmallows.
