Sweet Pickled Beets
Sweet Pickled Beets is an easy dinner. Made with 1 (10 qt.) bucket beets (1-inch tops and roots left on to cook), 6 c. vinegar, 3 c. sugar and 3 tbsp. mixed pickling spices, tied in a cloth bag, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Boil the beets until tender, about 2 hours.
Remove them from heat and peel.
Slice 1/4-inch slices.
Put the vinegar, sugar and spice bag in a kettle and boil for a few minutes or until sugar is well dissolved.
Add the beets to the syrup and bring it back to the boiling point.
Remove from heat.
Pack while hot in sterilized jars and seal.
Makes about 8 or 9 pints.
