In a large bowl, beat butter with sugar, egg yolks and dash of salt until blended.
Sift 1/4 flour into bowl, beat; add 1 teaspoon ice water.
Repeat with remaining flour and 1/2 to 2 teaspoons water, only enough to hold pastry together.
Form into ball. Refrigerate at least 1 hour before rolling out.
