Sweet 'n Sour Carrots (Salad)
Sweet 'N Sour Carrots (Salad) is an moderately easy dinner. Made with 2 lb. carrots, scraped and sliced, 1 green pepper, sliced thin, 3 onions, sliced, 1/4 c. oil and 3/4 c. vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook carrots in salted water until tender.
Drain.
Place in bowl to cool.
Heat oil, vinegar and sugar in pan until sugar is dissolved.
Put in blender.
Add soup, mustards, salt and pepper. Blend.
Pour over vegetables in bowl.
Refrigerate overnight to let flavors blend.
