Sweet and Sour Carrots
Sweet And Sour Carrots is an moderately easy dinner. Made with 1 lb. carrots, diagonally sliced, 1 green pepper, seeded and cut in 1-inch squares, 1 (20 oz.) can pineapple chunks (in own juice), 1/3 c. sugar and 1 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. Cook carrots covered in small amount of water (slightly salted) for 15 minutes.
Add green pepper and cook 3 minutes more.
Drain. Drain pineapple, reserving juice.
Combine sugar, cornstarch, salt, pineapple juice, vinegar and soy sauce in a separate pan.
Cook and stir until bubbly.
Stir in vegetables and pineapple; heat thoroughly.
Makes 6 servings.
