Mix water, yeast and sugar and let sit for 5 minutes.
Add rye flour to yeast mixture, then seed mixture, then white or unbleached flour.
Turn out on board; let rest for 10 minutes.
Knead until smooth and elastic; let rise in greased, covered bowl until double in size.
Punch down; divide into 2 parts.
Let rest for 10 minutes.
Shape into loaves.
Place in greased loaf pans.
Let rise in warm place until doubled in size. Bake at 350Β° for 45 minutes until loaves are done.
