Swedish Lemon Rings
Swedish Lemon Rings is an moderately easy dinner. Made with 3 1/2 c. sifted all-purpose flour, 1 c. granulated sugar, 1/2 tsp. salt, 4 tbsp. lemon juice or brandy and 1 1/3 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Start heating oven to 400Β°.
Sift flour, 3/4 cup of the sugar and salt into large mixing bowl.
Add lemon juice.
Cut in butter with pastry blender; mix with spoon to smooth dough.
Flour hands and pinch off pieces of dough.
Roll into pencil-thick strips 3-inches long.
Twist two strips together; shape into ring.
Mix almonds and remaining sugar on waxed paper.
Press rings into mixture; place almond side up on greased cookie sheet.
Bake about 8 minutes.
Do not brown.
Makes about 5 dozen.
