Susan's Refried Beans
Susan'S Refried Beans is an moderately easy dinner. Made with 3 c. dried pinto beans, water, 1 yellow onion, chopped, 2 cloves garlic, chopped and 1/3 c. oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Use an 8
10 quart heavy casserole.
Boil the beans in 6 to 8 cups water for 1 minute.
Let sit off the heat for 1 hour. Water should cover beans as they double in size. Drain beans in a colander fresh water and all remaining ingredients. If you have a pressure cooker, the beans take 30 minutes to cook; otherwise keep them simmering on the stove 2 hours or until tender.
Mash them bit with a potato masher until they are thick.
