Surrey House Catfish
Surrey House Catfish is an moderately easy dinner. Made with 1 catfish fillet (not too thick), 4 oz. whole crackers (unsalted), 6 oz. shelled, skinned roasted peanuts, 1 tbsp. honey and 3/4 c. yellow mustard, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 325Β°.
Coarsely grind crackers and peanuts together.
Place in mixing bowl and stir in 2 tablespoons melted butter.
In separate bowl, mix vinegar, honey and mustard together.
Take catfish fillet, skin side down, and spread evenly over the fillet the mustard sauce.
Coat the entire fillet with cracker and peanut crumbs.
Drizzle remaining 2 tablespoons butter over the crumbs.
Bake for 20 minutes, covered.
Finish, uncovered, for 8 to 10 minutes to allow crumbs to brown.
Best served with mild flavored rice.
