Sunshine Carrots
Sunshine Carrots is an moderately easy dinner. Made with 7 to 8 medium carrots, 1/4 c. orange juice, 1/4 tsp. ground ginger, 1 tsp. cornstarch and 1 tbsp. brown sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Bias slice carrots about 1/2 inch thick.
Cook until tender (10 to 20 minutes).
Drain and combine sugar, cornstarch, ginger and 1/4 teaspoon salt.
Add orange juice and cook, stirring constantly, until thickened and bubbly.
Boil 1 minute.
Remove from heat and stir in butter.
Pour over hot carrots and toss to coat evenly.
Garnish with fresh parsley.
Serves 6.
