Sunday Brunch Casserole
Sunday Brunch Casserole is an moderately easy dinner. Made with 1/2 lb. sliced bacon, 1/2 c. chopped onion, 1/2 c. chopped green pepper, 12 eggs and 1 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a skillet, cook bacon until crisp. Cool and crumble. Set aside. In the drippings, sauté onion and green pepper until tender; remove with a slotted spoon. Stir in hash browns, cheese, salt, pepper, dill, onion, green pepper and bacon. Transfer to a greased 13 x 9 x 2-inch baking dish. Bake, uncovered, at 350°
For 35 to 45 minutes or until a knife inserted near the center comes out clean. Yields 6 to 8 servings.
