Summertime Squash
Summertime Squash is an moderately easy dinner. Made with 2 lb. squash, sliced, boiled and drained, 1 large onion, chopped fine, 1/4 c. bell pepper, chopped fine, 1 1/2 c. crushed herb croutons and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Boil and drain squash.
Mix onion, bell pepper, soup and sour cream in squash.
Melt margarine and add croutons.
Mix in squash mixture with 1/2 of cheese. Add salt, pepper and garlic powder to taste.
Pour into casserole dish.
Top with remainder of cheese. Melt a little more margarine and toss 1 cup croutons and put on top of cheese.
Bake at 350Β° for 30 to 40 minutes.
(Can be frozen before or after baking.)
