Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. sliced yellow squash, 1/4 c. chopped onion, 1 c. sour cream, 1 can cream of chicken soup and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Steam the squash and onion together for 5 minutes; drain off excess liquid.
Mix the soup, sour cream and carrots together. Fold in the drained squash and onions.
Combine stuffing mix and butter; spread 1/2 of the stuffing mixture into the bottom of a 12 x 7 x 2-inch glass baking dish.
Spoon in the squash mixture; top with the remaining stuffing.
Bake at 350Β° for 30 minutes.
