Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 16 medium squash, sliced, 1 medium onion, sliced, 3 tbsp. butter, 3/4 c. sour cream and 1 1/2 c. grated cheddar cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute onion in butter, add squash.
Simmer until tender. Drain and add sour cream, cheese and salt, stirring over low heat until cheese melts.
Remove from heat.
Add beaten egg yolks, chives and bacon.
Pour into greased casserole dish.
Cover with bread crumbs.
Brown at 350Β° for 30 minutes.
Makes 8 to 10 servings.
