Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow summer squash, 1 medium onion, 1 egg, 1/2 c. milk and 1 c. cracker crumbs (ritz), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook sliced squash and onion in small amount of oil until tender, adding salt and pepper to taste.
Mix cooked squash with egg, milk, cracker crumbs and 1/2 of cheese.
Pour into baking dish.
Sprinkle with remaining cheese on top.
Bake at 350Β° for 20 minutes.
