Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow or zucchini squash, 1 large onion, chopped, 8 tbsp. margarine, 1/2 pt. cottage cheese and 1/2 lb. grated swiss or muenster cheese, this recipe delivers authentic, satisfying flavors. Lightly brown onion in 4 tablespoons margarine.
Thinly slice squash and add to frying pan.
Cook on low heat until squash is soft.
Add rest of margarine (4 tablespoons).
In a separate bowl, mix cheeses, eggs and salt.
Blend into squash mixture.
Pour into a large, greased casserole.
Bake about one hour in a 350Β° oven.
