Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. sliced yellow and/or green squash, 1/4 c. sliced onions, 1 can cream of chicken soup, 1 c. sour cream and 1 c. shredded carrot, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook squash and onions in salted boiling water 5 minutes. Drain.
Combine soup and sour cream.
Stir in carrots.
Fold in squash and onions.
Combine stuffing mix and butter spreading 1/2 in well-greased 12 x 7 1/2 x 2-inch baking dish.
Spoon veggie mixture on top.
Top with rest of stuffing.
Bake at 350Β° for 25 to 30 minutes.
