Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 c. squash, cut up, 1 1/2 c. chopped onion, 1 c. grated carrots, 1 c. sour cream and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil veggies in salted water 5 minutes. Drain well. Fold in sour cream, soup, salt and pepper to taste.
Mix stuffing and melted butter together.
Put half of stuffing in an 8 x 8-inch baking dish.
Pour in veggie mixture and cover with remaining stuffing.
Bake at 350Β° for 30 to 45 minutes.
