Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 6 medium zucchini, 3 c. soft breadcrumbs (about 6 slices), cubed, 1/2 c. grated parmesan cheese, 1 small onion, minced and 3 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown sausage.
Wash zucchini; cut off ends.
Do not peel. Cook in boiling, salted water for 5 minutes.
Halve lengthwise and remove pulp with spoon.
Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs.
Fill zucchini shells and top with sauce and Mozzarella cheese.
Bake at 350Β° for 30 minutes.
