Stuffed Zucchini
Stuffed Zucchini is an impressive dinner. Made with 2 medium zucchini, 1 small onion, chopped, 1 c. mushrooms, chopped, 1/2 c. celery, chopped and 1 tbsp. margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut zucchini in half length-wise.
Scoop out pulp, leaving 1/4 inch shell.
Combine onion, mushrooms, celery, margarine, and tomato in a microwavable dish.
Cover with plastic wrap and cook 4 - 6 minutes.
Drain.
Add crackers, egg, grated cheese, parmesan cheese, salt, and pepper.
Mound this stuffing in each zucchini shell. Cover and microwave 5 to 7 minutes.
Sprinkle with paprika.
