Stuffed Yellow Squash
Stuffed Yellow Squash is an moderately easy dinner. Made with 6 medium yellow squash, 1 c. chopped onion, 1 c. fresh tomatoes, peeled and chopped, 1/2 c. chopped bell pepper and 1/2 c. grated cheddar, this recipe delivers authentic, satisfying flavors. Simmer whole squash 8 to 10 minutes until tender, but firm. Slice in half; scoop out center, leaving firm shell.
Combine pulp and remaining ingredients except butter.
Fill squash shells and place in greased 9 x 13-inch casserole.
Dot with butter. Bake 20 minutes at 400Β°.
