Stuffed Tomatoes
Stuffed Tomatoes is an moderately easy dinner. Made with 1/3 c. black olives, 4 slices bacon, 2 tbsp. chopped onion, 4 hard-boiled eggs, diced and 1 c. celery, chopped fine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut olives into large pieces.
Cut bacon into 1/4-inch strips and cook slowly until crisp.
When bacon is half done, add onion and cook until soft.
Drain off fat.
Combine bacon and onion with eggs, celery and olives.
Add mayonnaise.
Stuff tomatoes and serve on lettuce.
