Stuffed Summer Squash is an moderately easy dinner. Made with 6 firm yellow crookneck squash, 1 onion, chopped, 6 tbsp. cracker crumbs, 1/3 c. cheddar cheese, grated and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Simmer squash in boiling salted water until tender for about 20 minutes.
Slice in half lengthwise and scoop out insides, leaving shells intact.
Drain and mash squash meat with remaining ingredients and stuff into squash shells.
Sprinkle with additional cheese; bake at 350Β° for 30 minutes.
