Stuffed Potatoes
Stuffed Potatoes is an moderately easy dinner. Made with 6 large potatoes, baked, 2 small garlic cloves, chopped, 2 tbsp. vegetable broth, 1 c. skim milk, warmed and 1 1/2 c. nonfat yogurt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
Cut potatoes in half and scoop out flesh.
Reserve skins.
Saute garlic in the stock until softened, about 3 minutes.
Mash the potato with the warm milk, yogurt, garlic, pepper, paprika and cabbage.
Stuff the potato mixture into the reserved skins.
Place the potatoes in a baking dish and bake them until heated through, 20 to 30 minutes.
