Stuffed Potatoes
Stuffed Potatoes is an moderately easy dinner. Made with 6 to 8 baking potatoes, 1/2 c. butter, 3 to 4 tbsp. chives, 3 to 4 tbsp. minced onion and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash, oil potatoes
Bake at 450° until tender.
Remove and cut out top of potato.
Scoop out inside of potato and put in mixer bowl.
Cream potato with butter, salt pepper, then chives, onions and sour cream. Put back into potato shell.
Bake at 325° for approximately 25 to 30 minutes.
Sprinkle grated cheese and bacon, if desired, on top of potato and let cheese melt.
Then serve hot.
