Stuffed Peppers Neapolitan is an impressive dinner. Made with 4 large bell peppers, 1/2 c. olive oil, 1/2 to 1 c. toasted bread crumbs, 3 tbsp. plus seedless raisins and 12 tsp. plus black pitted olives, chopped, this recipe delivers authentic, satisfying flavors. Prepare peppers for stuffing.
Mix stuffing (all ingredients except olive oil and tomato sauce*).
Add more oil if this is dry. Stuff the peppers.
Place stuffed peppers upright in deep baking dish.
Pour oil over peppers and top with 1 tablespoon of tomato sauce for each.
Bake in moderate oven (375Β°) for 1 hour.
Serves 4, hot or cold.
