Strawberry Pie
Strawberry Pie is an moderately easy dinner. Made with 1 baked 9-inch pie shell, 4 c. berries, sliced in half, 2 c. mashed berries, 1 c. sugar and 1 tbsp. butter (optional), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Heat mashed berries to simmering.
Cook gently for 3 minutes; strain through fine sieve.
Be sure to extract all juice.
To juice, add enough water to make 1 1/2 cups liquid.
In saucepan, mix the cornstarch and 1 1/2 cups liquid.
Boil, stirring constantly, until thick and clear.
Remove from heat.
Add the butter, 1 cup sugar and the lemon juice; cool.
Arrange a layer of fresh, halved berries in bottom of pie shell.
Spoon glaze over. Continue making layers this way until you get to the top.
Set in refrigerator at least 1 hour.
Top with whipped cream.
