Strawberry Jam
Strawberry Jam is an easy dinner. Made with 2 pt. strawberries, washed and hulled, 1/2 (1 3/4 oz.) pkg. powdered pectin, 1/2 tsp. grated lemon rind, 1 tbsp. lemon juice and 2 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mash strawberries in a 2-quart glass measure.
Stir in pectin, lemon rind and lemon juice.
Microwave, uncovered, on High for 6 to 8 minutes or until mixture reaches a full, rolling boil.
Stir in sugar; microwave, uncovered, on High for 5 to 6 minutes or until mixture boils hard for 1 full minute.
Skim off foam with spoon and pour into hot, sterilized jars, leaving 1/4-inch headspace.
Cover with metal lids and screw on band.
Let stand at room temperature until cool.
Store in refrigerator up to 3 weeks.
