Stir-Fried Collard Greens is an impressive dinner. Remove stems of collards and discard them.
Wash leaves thoroughly.
Slice leaves into bite-size pieces by rolling several leaves together and cutting into 1/4-inch strips.
Blanch greens in boiling water for 30 minutes.
Drain well.
Heat drippings in wok or large skillet until hot.
Add remaining ingredients. Stir-fry until vegetables are tender, about 4 to 5 minutes. Yields 6 servings.
