Stately Coconut Layer Cake
Stately Coconut Layer Cake is an moderately easy dinner. Made with 1 c. shortening, 2 c. sugar, 4 eggs, 3 c. sifted cake flour and 2 1/2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cream the shortening. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt.
Add to creamed mixture alternately with milk, beginning and ending with flour mixture; mix well. Stir in flavorings.
Pour batter into 3 greased and floured 9-inch cake pans.
Bake at 375Β° for 20 to 25 minutes or until done. Cool in pans 10 minutes.
Remove and cool completely.
