St. Patrick's Day Cupcakes
St. Patrick'S Day Cupcakes is an impressive dinner. Made with 1 3/4 c. all-purpose flour, 1 (3 oz.) pkg. instant pistachio pudding, 3/4 c. miniature chocolate chips, 2/3 c. sugar and 2 1/2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. In a large mixing bowl, stir together (these do not need an electric mixer) first 6 ingredients.
In a small bowl, combine eggs, milk, oil and vanilla or almond extract.
Stir into flour just until combined. Fill greased or paper lined muffin cups 2/3 full.
Bake at 375Β° for 18 to 20 minutes or until golden brown. Cool.
Frost with cream cheese icing; sprinkle with colored sugar and then milk chocolate pieces.
