Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 to 8 small yellow squash, cooked and drained, 1 medium onion, chopped, 3/4 c. milk, 1/4 tsp. salt and 5 to 6 strips bacon, fried crisp, drained and crumbled, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook squash, onion and pepper until tender and drain.
(Cook each separately.)
Layer squash, onion and bell pepper in a greased casserole dish; sprinkle with bacon and grated cheese. Beat egg and milk together and pour over casserole.
Top with crushed crackers.
Bake for 20 to 25 minutes at 425Β° until bubbly and brown.
