Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 c. squash, cooked until tender, 2 oz. pimiento, 2 carrots, grated, 1 small onion, finely chopped and 1 can cream of celery or chicken soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut squash into cubes.
Cook in salted water until firm and tender.
Drain.
Do not mash.
Melt margarine and mix with stuffing mix.
Mix remaining ingredients, folding in squash last. Put half of stuffing in bottom of casserole.
Add squash mixture.
Top with remaining stuffing.
Cook in a 350Β° oven until bubbly, about 1/2 hour.
