Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 3 c. yellow squash, sliced, 1 medium onion, sliced, 1/2 c. green pepper, sliced, 1/2 tsp. salt and 1 qt. water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook in large pot the sliced squash, onion and green pepper in salted water until tender.
Drain off liquid but save.
Put 1/2 cup of liquid in a buttered casserole dish.
Beat eggs and mix with shredded cheese.
Pour over top of squash.
Sprinkle crushed crackers over squash.
Pour melted butter on top.
Bake at 350Β° until brown.
