Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced and cooked, salt and pepper, 1 raw grated carrot, 1 (8 oz.) carton sour cream and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix squash, salt, pepper, carrot, sour cream, soup and onion. Melt margarine and mix with stuffing.
Put 1/2 of stuffing on the bottom of casserole.
Add squash mixture and top with remaining stuffing mix.
Bake at 350Β° for 30 to 40 minutes.
Serves 4 to 6. This freezes well, also.
