Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 small yellow squash (enough to make 1 qt.), sliced, 1 tsp. salt, 3 tbsp. butter, 1 c. grated cheese and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook squash in salt water until tender, drain and mash.
Add butter, cheese, beaten egg, onion, milk and 3/4 cup cracker crumbs.
Put into buttered baking dish. Sprinkle rest of cracker crumbs on top.
Bake at 425Β° for 20 to 25 minutes.
Serves 6.
