Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 8 to 10 summer squash, 6 crackers, crumbled, 1/2 stick butter, 2 eggs, beaten and 1 small onion, minced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Slice squash and parboil in salt water until tender; drain and mash well.
Add cracker crumbs.
Mix eggs and milk and add to squash.
Add onion, bell pepper, cheese, butter, sugar, salt and pepper. Put in buttered pan and top with more cracker crumbs.
Dot with butter.
Bake at 350Β° for 1 hour.
