Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 lb. squash, 8 or 10 crackers, 1/4 c. margarine, 2 eggs and 1 large onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash and onions together until tender.
Drain off water and mash until fine.
Add salt, pepper, cheese, margarine, egg yolks and crackers (crumbled fine).
Beat egg whites until stiff and fold into mixture.
Bake in buttered casserole dish until brown.
