Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. fresh squash, cooked and drained, 1 carrot, grated, 1 large onion, grated (i cut mine in small pieces and cook in small amount margarine), 1 c. sour cream and 1 can chicken or mushroom soup, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Grease large casserole dish.
Sprinkle 1/2 of stuffing mix on bottom.
Combine first 5 ingredients and mix well.
Pour over stuffing mix in casserole.
Sprinkle remaining stuffing mix over squash.
Bake at 350Β° until bubbly, about 20 to 30 minutes. Serves 6 to 8.
