Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 1/2 lb. fresh yellow squash, do not peel, salt and pepper, 1 stick oleo, 3/4 c. chopped onions and 15 ritz crackers, crumbled, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt 3/4 stick of oleo and saute onion in it.
Slice and cook squash until tender.
Drain squash and mash real good.
Add onion, 15 Ritz cracker crumbs, eggs, seasoning and cheese; mix well.
Put into 2-quart casserole.
Melt the 1/4 stick of oleo, 15 more Ritz crackers, crumbled and sprinkle on top.
Bake at 350Β° for 35 minutes.
